"Bellota" means acorn in spanish. A bellota pig is a pig bred in the wild and so fed on acorns during the Montanera period (between october and the beginning of march). It will also have eaten whatever else it could forage as well as cereals deposited in it's natural environment, the famous iberian "dehesas" by the breeders. The quantity of cork oaks and great oaks varies from region to region. This, among other things characterises the terrior.
